Avocado-Cilantro Dressing

I have a huge weakness for creamy salad dressings. I am not proud of this but there was a period of time (the length will remain unnamed) when all I would order at restaurants was Caesar salads. Seriously. That was it. Actually, I don’t know if you’re ready for that story yet. Also, I’m pretty sure that as a Holistic Nutritionist that story does not make me look very good. Ignore that! I’m perfect!

Anyways, today’s story is about THIS salad dressing where the delicious creaminess comes from (drumroll please…) AVOCADO!

I came up with this dressing while making a taco salad and feeling kind of annoyed that I couldn’t simply dress my salad in guacomole. Then I realized I kind of could. Because I’m a grown up. Also because I could make a dressing out of guac ingredients. But mostly because I’m a grown up.

Since that day I use this dressing ALL the time. Anytime you’re about to make a salad even remotely tex-mex-y, use this dressing. It never disappoints. Even if you’re not making a taco salad, use this dressing. It never disappoints.avocado-cilantro-lime-salad-dressing-4.jpg

Side note: this is also a bomb veggie dip if you omit the water (which is just the thinning agent). If you like the dressing, definitely make this as a dip. Although I don’t know why you wouldnt like this dressing. Unless you are one of those people who hates cilantro in which case I am very sorry.

Another side note: Did you know that people who hate cilantro aren’t just being picky eaters? They actually possess a gene which causes them to smell soapy-ness in cilantro’s scent and overwhelming bitterness when they taste it.

For those of us who love cilantro however, it tastes like a more tangy/citrusy parsley. I’m okay with that. And I’m definitely okay with using a ton of it in this dressing.

To all you cilantro-haters out there – you can totally use parsley as a substitute here.

INGREDIENTS

  • 1 large ripe avocado
  • 1/3 cup cilantro
  • Juice and zest from 1 lime
  • 1 clove garlic
  • 1/2 tsp sea salt
  • Water to thin

METHOD

  • In a food processor or high speed blender, blitz all ingredients (except water) together until smooth and creamy and resembles guacomole.
  • Add water 1 tbsp at a time until you have reached your desired consistency. I usually add about 3-4 tbsp.
  • Use as a salad dressing OR omit the water and use as a dip for veggies!
