Greek Salad Bites

Ok first of all, I just gotta say it – HOW cute are these?!

I don’t think I need to write anything else about them because look at those babies! Who wouldn’t wanna make them? Great appetizer, fun lunch, perfect snack – they do it all.

I used organic sheep’s milk feta from a local cheese store and my life is changed. The creamy sharp feta paired with the tangy tomatoes and crunchy cucumber are better together than apart – preferably all in one bite!

INGREDIENTS

  • 12-15 cherry tomatoes
  • 3 small garden cucumbers sliced
  • a cup of organic feta, cubed
  • DRESSING:
  • 1/4 cup cold pressed extra virgin olive oil
  • 2 Tbsp red wine vinegar
  • 2 tsp dried parsley
  • 2 tsp dried oregano
  • Sea salt
  • Cracked black pepper

METHOD

  • Assemble the green salad bites on toothpicks with the cucumber slices as the base, feta in the centre and the tomato halves on top.
  • Arrange on a plate and drizzle with the dressing right before serving. Enjoy!
