Salted Caramel Easter Eggs (Raw, Vegan, Paleo)

This recipe is a sure-fire crowd pleaser that is JUST as easy to throw together as going out and buying store-bought caramels or chocolate eggs.

These in no way just pertain to Easter – I eat these babies all year round! They are super decadent tasting from the dates and super filling because of the cashews! Cashews are a great source of healthy fats and proteins and dates provide us with some awesome dietary fibre. These two components slow the rate that the sugar hits our blood stream – AKA no sugar spikes or crashes!!

I bet our parents wish they had these when we were kids, right?!

INGREDIENTS

  • 1 cup raw cashews
  • 1 cup pitted dates
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt
  • Flakey Sea Salt (like Maldon for sprinkling)

METHOD

  • Throw all the ingredients together (except the flakey salt for sprinkling) and blend on high until they form a uniform dough-like substance. It should be pliable and sticky! (like caramel)
  • Wet/dampen your hands and roll the dough into balls, pressing down in the centre to form “egg” like shapes for easter.
  • Place on parchment paper, sprinkle with sea salt and refrigerate for 20 minutes!
  • Serve & Enjoy!
